Vegetable Fried Rice

Ingredients:

  • 3 c steamed rice
  • 1 med sized carrot (diced)
  • 1 med size onion (diced)
  • 1 tbsp celery (chopped)
  • 1/2 c button mushrooms (sliced) 
  • 1/2 c green beans (sliced)
  • 2-3 tbsp soya sauce
  • salt to taste
  • 1/4 tsp black pepper (ground)
  • 2-3 tbps butter or oil
  • green pepper/capsicum (optional) chopped) 
  • 3 tbsp frozen/fresh green peas 
PROCEDURE;

  1. Heat the oil in the pan,fry onion for a minute or till transparent.
  2. Add the mushrooms and fry for a minute or 2.
  3. Add all the remaining vegetables and stir fry for about 5 minutes.
  4. Add little oil/butter if needed.then add rice,salt.soya sauce,and blackpepper.
  5. Stir well till the rice is slightly fried.
  6. Serve with other vegetable or as main dish.

Chocolate Frosting



This recipe will make your cake moist and better,and everybody will love it..Anyway,who doesn't like chocolate??!!

Ingredients:

    * 100ml cream
    * 100ml condensed milk
    * 1  cup chocolate chips
,unsweetened (melted )
    * 1 tsp vanilla essence
    * 2 tbsp sugar
    * 2 tbsp butter (melted and warm)   

Directions:

    * Beat the cream.
    * Add all the ingredients and mix thoroughly,you can beat them or use a blender till smooth.
    * Pour on top of the cake.

EasyTofu Burger

Simple and easy tofu recipe that you will love, it's also also great to grill them !


Ingredients:

  • 1 lb  firm tofu
  • 1/4 c each flour, corn flour
  • 1/2 c  fresh celery leaves (chopped) (or kintsay)
  • 1 tsp each paprika, coriander, cumin
  • 1/2 tsp chopped carrots
  • 1/4 tsp ginger
  • 1/4 tsp black pepper (ground)
  • 1/2 tsp salt  
  • 1 tbsp soysauce
  • Optional: asefetida (hing)
  • 1 tbsp chopped onion 

Directions:

  1. Heat a non-stick frying pan on medium with olive oil, or your favorite cooking oil.
  2. Add a pinch of asefetida (hing) or chooped onion to the oil for extra flavor.
  3. Chopped  or mashed tofu.
  4. Throw in everything else and mix well by hand, or on low in the food processor just until it all clumps up.
  5. Form into eight 3 - 4 inch patties
  6. Fry in small amount of oil, on medium heat, 5-7 minutes on each side, or until golden brown.
  7. Serve with bread or with rice.Enjoy!!



Vegetarian Mac and Cheese!!

Delicious mac and cheese!A great treat for kids,they will surely love and enjoy this one.

Ingredients:

Directions:

Prepare pot of boiling water for macaroni noodles.

  1. Saute the mushrooms (and onion if any) for 2 mins,then add milk and water,just before boiling and add the  pepper, and basil (wait if using fresh).
  2. Use the flour and water to make a slurry and add to the milk.
  3. Add the cheese once the milk starts to thicken and turn off the heat. (If using fresh basil, add at the same time as cheese).
  4. Prepare the macaroni.
  5. Drain the macaroni and add  cheese sauce and salt, quickly heat through.
  6. Serve and enjoy! 

Eggless Sponge Cake

An easy eggless sponge cake!I can't believe it's eggless..yummy..

Ingredients:
½ pack Condensed Milk(200 gms)
2¾ cups All Purpose Flour
1½ tsps. Baking Soda
2 tbsps. Sugar(powdered)
½ cup Butter
½ tsp. Vanilla Extract
100 ml Soda water

Directions

   1. Sift flour, baking powder, baking soda, and sugar together 2 to 3 times. Keep aside.
   2. Mix condensed milk in a bowl with butter and beat well till it turns smooth. Add flour one spoon at a time. Add some milk as and when butter begins to get too stiff. Be careful to stir the mixture in one direction only. This incorporates more air and makes the cake fluffier.
   3. Once all the flour is used up, beat the batter as above till it turns light (5-7 minutes). Add soda and mix gently till smooth.
   4. Pour this mixture into a greased and powdered cake tin and place in a pre-heated oven (300 c). Reduce the temperature to 200 c for 5-7 minutes and 150o c till the cake is done.
   5. Check for doneness using a toothpick,if it comes out clean,it's done. Remove and cool it on a wire rack.

Easy but Yummy Spaghetti Sauce!!

Spaghetti,spaghetti!!My daughter loves spaghetti so i'm preparing this recipe at least once a week,and she go crazy with it!!This is made with fresh tomatoes,so it's very healthy..

Ingredients:

*1 kg fresh tomatoes(boiled for at least 5 mins)
*1 pc bayleaf
*1/2 tsp dried oregano
*1/2 tsp dried basil
*1 tbsp sugar
*1 tsp fenugreek powder(optional)
*2 tbsp sweet/bell pepper(diced)
*1/4 tsp hing powder(or 1 med size onion,diced)
*100 gms paneer,cube(optional)
*1 tsp salt
*1/4 tsp black pepper(powdered)
*vegetable oil/ olive oil
*1/2 c chopped carrots
* cheddar cheese,grated (for toppings)

* peel the boiled tomatoes and put in the blender,grind till it's smooth.
* heat the sauce pan and add oil.
* fry the hing/onion for a minute.
* add the tomato and the rest of ingredients except paneer,cheddar cheese and sweet pepper.
* bring the sauce to a boil and let it simmer for at least an hour or till it thickens,stirring ocassionally.
* add the paneer ang sweet pepper and simmer for 7 minutes.
* add the cheddar cheese and serve with the pasta..Enjoy!!

Yummy and Creamy Mushroom Soup!!

Soup is so nice and light,and yummy like this one.

Ingredients:

* 200 gms button mushrooms
* 1/4 tsp hing(or 1 Med size onion)
* 1 tbs butter/ ghee
* sunflower/olive oil
* 1 c vegetable stock
* 2 tbsp flour/corn flour
* 1 liter whole milk
* fresh ground salt & pepper
* 1/2 tsp dried oregano
* 1/2 tsp dried basil
* 1/2 tsp dried thyme
Directions

1.
fry hing for 10 seconds.(or onion till transparent )
2.
clean and slice mushrooms as desired thickness.
3.
fry the mushrooms for about 2-3 mins or till lightly brown,then add hing/onion
4.
sprinkle flour into pan and stir well to remove lumps.
5.
add oregano,basil and thyme and stir.
6.
add half of the stock.
7.
stir and scrape cooked flour off bottom until thickening.
8.
add half the milk stirring all the time.
9.
continue to add stock and milk in turn until all added.
10.
adjust seasoning and add plenty of pepper.
11.
simmer very gently for 10-15 minutes.

Serve hot.

Tomato Soup

Ingredients
6 medium sized Tomatoes (pureed)
1 1/2 medium sized Onion(or 1/4 tsp hing)
1 nos. Bay Leaf
1 tbsp butter
1 tsp Salt
1/4 tsp Pepper Powder
1/4 tsp cinnamon stick
1 tsp Sugar
2 c water
1/2 tsp oregano (dried)
1 tsp coriander leaves
Oil/butter for frying

Method.
· Blend the tomato in a blender to form a puree.
· Heat a sauce pan then add butter and then add immediately the bay leaf for a second.
· Now add the puree in the sauce pan with 2 cups of water allow it to boil.
. Put in salt,hing(onion),sugar and 2 cups of water,oregano and cook for 10 mins.
· Meanwhile adjust the salt and pepper as per taste.
. Add the coriander leaves before serving.
. Yummy and Healthy Tomato Soup is ready to be served.

Scrambled Tofu

Oh, i love tofu, so i want to share you this simple tofu recipe.

Ingredients:

* 1/2 yellow onion, diced
* 1/2 green bell pepper, diced
* 300 gms tofu
* 2 tbsp oil or butter
* 1 tsp garlic powder
* 1 tsp onion powder(hing)
* 1/2 tsp celery(or coriander leaves)
* 1 tbsp soy sauce
* 2 tbsp nutritional yeast
* 1/2 tsp turmeric (optional)

Preparation:
Slice the tofu into approximately one inch cubes. Then, using either your hands or a fork, crumble it slightly.

Sautee onion, pepper and crumbled tofu in oil for 3-5 minutes, stirring often. Add remaining ingredients, reduce heat to medium and allow to cook 5-7 more minutes, stirring frequently and adding more oil if needed.Serve with bread or rice.



**Tip of the day:

Avoid eating raw food with cooked food,it causes indigestion too like eating cold food along with the meals.

Fruits And Nuts Bars

Here is one of family's favorite.This recipe is healthier coz wheat flour is better than all purpose/white flour.It's really good.So enjoy!

INGREDIENTS:

Whole Wheat Pastry flour 3/4 cup
Baking soda 1/4 teaspoon
Baking powder 1/4 teaspoon
Salt 1/4 teaspoon
Light brown sugar 1/2 cup
Dried fruits, chopped 3 cups (any combination)
Nuts, chopped 3 cups (any nuts)
Condensed milk 3/4 cup (pureed)
Vanilla extract 1 teaspoon
Ground ginger (optional) 1/4 teaspoon

METHOD:

1 Preheat the oven at 350F.

2 Grease and dust a 13×9 inch pan with little flour.

3 In a large bowl whisk together whole wheat pastry flour, baking soda, baking powder, salt, ground ginger (if using) and light brown sugar.

4 Also add the chopped dried fruits and nuts of your choice. Make sure that the dried fruits are not lumped together. Use your fingers mix it thoroughly.

5 In a liquid measuring mug, measure 3/4th cup of condensed milk and vanilla extract; whisk it nicely.

6 Add the wet ingredients to the dry ingredients and mix it well. Since it’s a lot of dried fruits and nuts, chances are the flour mixture in the bottom may not be combined well.

7 Spread the batter into the prepared pan and use a spatula to evenly press it.

8 bake for 30 minutes first and then slowly increased the time and around 37th minute took the pan from the oven. Check the center of the cake with a toothpick to see if it’s done and time it accordingly because ovens may vary.

9 Once out of the oven, leave the pan on a wire rack and let it cool completely before cutting it. Let it cool completely; don’t be in a hurry or else you will end up with broken pieces. The bars taste better the next day and gets even better later.These bars will keep good for 2 weeks in room temperature and store for months in the refrigerator.

Avoid eating cold food,like ice cream,juices,shakes after eating, it can cause indigestion.

Best Chocolate cake (FUDGE)

Ooopsss,this is my very first recipe for my blog and i'm soo excited coz this recipe is really good.I found this recipe in the web but i forgot which website.This is actually chocolate crinckle but i made it as a cake.Anyway,here is the recipe:


INGREDIENTS:

1 c whole wheat flour
1 1/2 c all purpose flour
2 c sugar
3/4 c butter( i used ghee,clarified butter)
1 c cocoa powder (unsweetened)
4 pcs med bananas (pureed with milk)
4 tbsp milk
2 tsp vanilla essence
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
powdered sugar (for coating)

Directions:


  1. In a bowl, mix all the dry ingredients except sugar and sift them.
  2. In another bowl,mix the butter/ghee,pureed bananas and sugar then beat them till smooth.
  3. Add the vanilla essence and beat again.
  4. Add the mixture to the flour mixture and mix well,mix the dough with hand after.
  5. Transfer into greased bowl,cover and refrigerate for 3 to 6hrs.
  6. Preheat the oven at 350 for 15 mins.
  7. Grease and powder the pan and put the mixture.then put powdered sugar on top.
  8. Bake for 25 to 30 mins or till done.
