Vegetarian Mac and Cheese!!

Delicious mac and cheese!A great treat for kids,they will surely love and enjoy this one.

Ingredients:

Directions:

Prepare pot of boiling water for macaroni noodles.

  1. Saute the mushrooms (and onion if any) for 2 mins,then add milk and water,just before boiling and add the  pepper, and basil (wait if using fresh).
  2. Use the flour and water to make a slurry and add to the milk.
  3. Add the cheese once the milk starts to thicken and turn off the heat. (If using fresh basil, add at the same time as cheese).
  4. Prepare the macaroni.
  5. Drain the macaroni and add  cheese sauce and salt, quickly heat through.
  6. Serve and enjoy!

Easy but Yummy Spaghetti Sauce!!

Spaghetti,spaghetti!!My daughter loves spaghetti so i'm preparing this recipe at least once a week,and she go crazy with it!!This is made with fresh tomatoes,so it's very healthy..

Ingredients:

*1 kg fresh tomatoes(boiled for at least 5 mins)
*1 pc bayleaf
*1/2 tsp dried oregano
*1/2 tsp dried basil
*1 tbsp sugar
*1 tsp fenugreek powder(optional)
*2 tbsp sweet/bell pepper(diced)
*1/4 tsp hing powder(or 1 med size onion,diced)
*100 gms paneer,cube(optional)
*1 tsp salt
*1/4 tsp black pepper(powdered)
*vegetable oil/ olive oil
*1/2 c chopped carrots
* cheddar cheese,grated (for toppings)

* peel the boiled tomatoes and put in the blender,grind till it's smooth.
* heat the sauce pan and add oil.
* fry the hing/onion for a minute.
* add the tomato and the rest of ingredients except paneer,cheddar cheese and sweet pepper.
* bring the sauce to a boil and let it simmer for at least an hour or till it thickens,stirring ocassionally.
* add the paneer ang sweet pepper and simmer for 7 minutes.
* add the cheddar cheese and serve with the pasta..Enjoy!!

Yummy and Creamy Mushroom Soup!!

Soup is so nice and light,and yummy like this one.

Ingredients:

* 200 gms button mushrooms
* 1/4 tsp hing(or 1 Med size onion)
* 1 tbs butter/ ghee
* sunflower/olive oil
* 1 c vegetable stock
* 2 tbsp flour/corn flour
* 1 liter whole milk
* fresh ground salt & pepper
* 1/2 tsp dried oregano
* 1/2 tsp dried basil
* 1/2 tsp dried thyme
Directions

1.
fry hing for 10 seconds.(or onion till transparent )

clean and slice mushrooms as desired thickness.
3.
fry the mushrooms for about 2-3 mins or till lightly brown,then add hing/onion
4.
sprinkle flour into pan and stir well to remove lumps.
5.
add oregano,basil and thyme and stir.
6.
add half of the stock.
7.
stir and scrape cooked flour off bottom until thickening.
8.
add half the milk stirring all the time.
9.
continue to add stock and milk in turn until all added.
10.
adjust seasoning and add plenty of pepper.
11.
simmer very gently for 10-15 minutes.

Serve hot.

Scrambled Tofu

Oh, i love tofu, so i want to share you this simple tofu recipe.

Ingredients:

* 1/2 yellow onion, diced
* 1/2 green bell pepper, diced
* 300 gms tofu
* 2 tbsp oil or butter
* 1 tsp garlic powder
* 1 tsp onion powder(hing)
* 1/2 tsp celery(or coriander leaves)
* 1 tbsp soy sauce
* 2 tbsp nutritional yeast
* 1/2 tsp turmeric (optional)

Preparation:
Slice the tofu into approximately one inch cubes. Then, using either your hands or a fork, crumble it slightly.

Sautee onion, pepper and crumbled tofu in oil for 3-5 minutes, stirring often. Add remaining ingredients, reduce heat to medium and allow to cook 5-7 more minutes, stirring frequently and adding more oil if needed.Serve with bread or rice.



**Tip of the day:

Avoid eating raw food with cooked food,it causes indigestion too like eating cold food along with the meals.
